Tis the season … to sit around in pajamas and watch Christmas movies. That’s pretty much what we have been doing for the last week. Between the color, the dreary weather and all the Christmas movies on the Hallmark Channel right now, that’s all I really want to do. That and snack, of course. What better snack is there for movie watching then popcorn? Well, I think we have found one thing better: White Chocolate Peppermint Popcorn.
I’m a sucker for sweet and salty snacks. Salty popcorn, paired with just about anything sweet, is probably my favorite way to enjoy sweet + salty. Since we are watching Christmas movies, peppermint seemed like the obvious flavor choice.
Just mixing in peppermint pieces with the popcorn won’t work, though. You need the peppermints to adhere to the popcorn, so that’s where white chocolate comes in! Any white chocolate melting chocolate or chocolate bark will work for this recipe.
One caveat to this recipe, make sure to purchase soft peppermints. Soft peppermints are the kind that melt in your mouth right away, not the hard ones you have to leave in your mouth for minutes to melt. Hard peppermints are too crunchy for the recipe, but the soft peppermints are perfect!
White Chocolate Peppermint Popcorn
4 cups of popped popcorn (I used Orville Redenbacher’s Naturals Light Simply Salted)
3/4 cups white chocolate melting chips or bark
1/2 cup crushed soft peppermints
Line a baking sheet with parchment paper. Pop your popcorn using an air popper, stove or microwave. Pour popcorn onto baking sheet.
Placed soft peppermints into a Ziploc plastic bag. Using a rolling pin, pound peppermints until crushed.
Melt your chocolate in the microwave. Microwave the chocolate for 1 minute, stir the chocolate. If not yet melted, repeat in 30 second increments, stirring after each 30 seconds, until fully melted.
Pour chocolate over popcorn. Sprinkle peppermint pieces over popcorn. Let chocolate cool and harden. Once fully cooled, break any large pieces into bite sized pieces. Store in an airtight container for 3-4 days.
