A couple of years ago we hosted a party with gourmet S’mores for dessert. We had this fantastic fire pit at our old house (that you can see at the bottom of this post) that was great for S’mores making. We really, really miss that fire pit! Pretty much every combination of S’mores I tried the night of that party was delicious! One unexpectedly good flavor combination that I tried included fresh raspberries and white chocolate. I’d never thought of putting fresh fruit in my S’mores. But, once I tried it, I experimented with all types of yummy fresh fruits in my S’mores that summer.
The weather here has been super cold — like drip-your-faucets-at-night cold. In fact, I’ve dripped our faucets more this winter than I think I have ever before in my entire life combined. So, even though we have a small fire pit at our new house, outdoor S’mores making probably isn’t happening anytime soon. For Valentine’s Day, I decided to recreate one of those fruit flavored S’mores with this White Chocolate Strawberry S’mores Parfait.
This S’mores Parfait is super simple to whip for a Valentine’s snack or Valentine’s dessert. Both kids and adults will enjoy the flavor combination. If you use skim milk, it’s a pretty light dessert, making it an indulgence you can feel good about!
White Chocolate Strawberry S’mores Parfait
1 package of White Chocolate instant pudding mix
2 cups milk
Heart Shaped Marshmallows
Mix milk and pudding mix according to package directions. Chill pudding for about an hour. Crush about 4 graham crackers. Chop about 1 cup of strawberries. Place graham crackers in bottom of four small dishes, dividing equally. Top graham crackers with strawberries. Cover strawberries with prepared pudding. Top with plain or toasted marshmallow. You can toast marshmallow under broiler or by using a small kitchen torch.
