With Valentine’s just a little over a week away, sweet little pink desserts have been on my mind! And, when I think about Valentine’s Day, no dessert is complete without some chocolate! With this winter weather, I’ve been enjoying hot cocoa for a little after-dinner treat. To make a special Valentine’s Day Hot Cocoa, I decided to try making White Chocolate Raspberry Hot Cocoa.
My little guy has been home sick from school this week, so he got to be my taste tester for this White Chocolate Raspberry Hot Cocoa. He gave this treat his complete approval and said that it isn’t just for girls even though it’s pink!
To make this White Chocolate Raspberry Hot Cocoa, I first made some Hot Cocoa Stirrers. I made Dark Chocolate Stirrers for a Hot Cocoa bar in the past, so I modified the recipe a little bit to give it a new flavor. These White Chocolate Raspberry Hot Cocoa Stirrers would make a great little Valentine’s Day treat for teachers, neighbors, or friends. There is something magical about adding them to a cup of hot milk and watching the milk turn into a colorful, rich drink!
White Chocolate Raspberry Hot Cocoa Stirrers
1 cup of white chocolate chips
Red or pink GEL food coloring
1/4 teaspoon raspberry extract
2 ounce plastic cups and wooden spoons or sticks
Melt white chocolate chips in the microwave, in 30 seconds increments, stirring after each increment. Repeat until chocolate is completely melted and smooth. Add one to two drops of GEL food coloring depending on the desired color. Make sure to use gel food coloring because the liquid coloring could cause your chocolate to seize. Add raspberry extract to chocolate and stir. Adding more extract may cause chocolate to seize.
Pour chocolate into 3 plastic cups and place wooden spoons or sticks into the middle of the cup. Place cup into refrigerator and let cool until completely set. I left mine in the refrigerator for about 2 hours before removing from cups. Chocolate should easily pull out of cups; if not, it probably has not completely cooled. Makes 3 2-ounce stirrers.
To make Hot Cocoa: Heat about 8 ounces of milk in microwave until almost boiling. Remove and immediately stir in Hot Cocoa Stirrer until melted into milk. Top with whipped topping, if desired.
