Instead of just packing a dessert, I am going to bring along some of this home made Red, White, & Boom Fourth of July Granola Trail Mix. It’s packed with oatmeal, peanuts, and coconut. To give it an Independence Day vibe, I added red cranberries, blueberries, and white yogurt covered raisins. It will satisfy a craving for something sweet and also for something crunchy. Store bought trail mix is a no-no for us since my son has a severe tree nut allergy. It’s virtually impossible to find a mix without tree nuts; so, home made is the only way to go.
This trail mix could be used to munch on, but could also be eaten for breakfast with milk. It would also be delicious with fruit and yogurt. And, if you don’t have nut allergies in your house, feel free to add any nuts that you like! I packaged the
Trail Mix in a 1/2 pint mason jar and topped it with a 2 inch printable label.

Red, White, & Boom 4th of July Granola Trail Mix
4 cups oats
1/2 cup peanuts
1 cup shredded, sweetened coconut
3 tbsp brown sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
pinch of salt
1/3 cup applesauce
1/3 cup honey
1/3 cup apple juice
1/2 cup dried cherries
1/2 cup dried cranberries
1/2 cup dried blueberries
1/2 cup yogurt covered raisins
Preheat oven to 350 degrees. Mix oats, peanuts, coconut, brown sugar, cinnamon, nutmeg, and salt in a large bowl. Pour in applesauce, honey, apple juice and mix thoroughly. Pour mixture onto ungreased baking sheet. Bake for 20 minutes, stirring after 10 min. Stir granola and turn heat down to 325 degrees. Bake for another 20 minutes, stirring after 10 minutes. (Total baking time is 40 minutes.)
Cool completely. Stir in cherries, cranberries, blueberries, and yogurt covered raisins.
