It’s finally Thanksgiving Week!!! To get in the mood, I made these Mini Streusel Pumpkin Pies for you. They are the perfect size for an individual sized serving of pie. Almost too perfect and irresistible, if you know what I mean! And, the streusel topping adds a little crunchy, sweet goodness to the perfect pumpkin pie. These little guys won’t stick around for long at your house!
Whenever we need a quick dessert at our house, I take the fruit we have on hand and bake it with a streusel topping. It’s such a versatile dessert because you can really use almost any combination of fruit. In the summer, we use peaches and blueberries. In the fall and winter, it’s often pears and cranberries. But, my kiddos love the streusel topping that we put on top of the baked fruit. Our little guy has a severe tree nut allergy, so I never add nuts in my streusel toppings. But, this streusel would also be delicious with some chopped pecans or walnuts added to it.
Our favorite streusel topping is not just for baked fruit or fruit pies. It’s equally delicious on pumpkin pie! I think this just might prove that a little streusel really makes any dessert better!!!
I also like the mini version of pumpkin pie because it is so easy to pack up. If you have leftovers, simply tuck a pie into a paper snack & sandwich bag (I buy mine locally at Whole Foods Market), punch two small holes in the bag, then tie it with some baker’s twine.

Mini Streusel Pumpkin Pies
1 15 ounce can pumpkin
1 14 ounce can sweetened condensed milk
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp salt
10 mini pie shells
1/4 cup all purpose flour
1/4 cup brown sugar
1/4 cup butter, melted
1/4 cup oatmeal
Preheat oven to 425 degrees F. For filling, beat, on low, pumpkin, sweetened condensed milk, eggs, cinnamon, ginger, nutmeg, and salt. For streusel, stir together flour, brown sugar, butter, and oatmeal. Set aside. Using 1/4 cup measuring cup fill pie shells with pie filling. Bake 15 minutes at 425 degrees F. Reduce temperature to 350 degrees F. Bake for 20 minutes. Remove pies from oven, sprinkle streusel over pies. Continue baking for 10-15 minutes or until a knife inserted in the center comes out clean. Cool pies before serving. Store in refrigerator.
