I admit that I was a little intimidated about making homemade marshmallows. Several online posts stated that they were difficult and a sticky mess. But, I’m glad that I tried. They were certainly sticky, but they were much easier than expected. If you like the taste of fresh lime juice, you are going to love these.
- 1/4 cup confectioners’ sugar
- 2 (1/4-ounce) envelopes unflavored gelatin (about 2 tablespoons)
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup freshly squeezed lime juice
- 1 3/4 cups sugar
- 3/4 cup light corn syrup
- 1/2 cup cool water
- 1/4 teaspoon salt
- 1 tablespoon grated lime zest
- yellow and green food coloring
Using a knife, run the knife around the edges of the dish. Turn the dish over and release the marshmallows from the dish onto wax paper, covered with confectioners sugar. Using a knife, covered with confectioners sugar, cut the marshmallows into 2 inch squares. Roll the cut marshmallows in the confectioners sugar, until all sides are covered.
i love this, never tried homemade marshmallows before but I really want to try these Sherry Baird mssherry48@hotmail.com
Thanks, Sherry! Go for it! They were easy and the texture of homemade marshmallows was so good!
Deanna, do you use all the powder sugar for the pan or just for coating the pan and coating the marshmallows after you cut them?
If the Good Lord is willing I am going to make these tonight. I can’t wait, is it okay to just use green coloring because I thought about making these for my daycare children for St. Patrick’s Day.

Sorry but Am I going crazy but is your name Deanna,o Mira? sherry baird
Hi Sherry!
I just gave the pan a good coating – I don’t think it took all of the 1/4 cup. You can save the extra to use when you cut them. But, it wouldn’t hurt to have a little extra, just in case:)
Deanna (Mira is my daughter)
Sorry Deanna, Maybe I need to learn to read, lol, My sister’s name is Deanna too but it is spelled Dee Anna it is like Anna is her middle name, don’t know what my parents were thinking, they were so young they probably were not thinking. Doesn’t matter how it is spelled it is a beautiful name. How I read your information was I am Mira, Sam’s mom, maybe next time I will slow down and read it right. Thanks though, I was hoping to get them made today but it looks like they may have to wait but hopefully I will get them made by Friday for our party.Sherry Baird
Deanna,
I made the marshmallows this morning, I forgot they had to sit over night and I don’t have good patience. They are good though, but I don’t think some of my grand children will like the lemon/lime taste as well as I do. Thanks for sharing, now I can say I have done something I have never done before. Hi, I would like to try this but I noticed that there is no egg whites. Is this possible without egg white?
Hi Food so delicious!
I’ve made homemade marshmallows many times with a variation of this recipe, but never with egg whites in the recipe. They’ve always turned out great! Best,Deanna
