Kentucky Derby Cupcakes
1 box butter cake mix
1 cup of water
1/3 cup melted butter
3 eggs
1 cup of mini chocolate chips
2/3 cup of pecans, finely chopped
Preheat oven to 350 degrees. Line 24 muffin cups with paper muffin liners.
Beat cake mix, water, melted butter, and eggs on medium for 2 minutes. Stir in chopped mini chocolate chips and pecans.
Spoon batter into muffin cups, using an ice cream scoop. Bake about 18 – 20 minutes. Cool for 10 minutes, then remove from muffin tins and cool completely on wire racks before icing cupcakes.
Vanilla/Brown Sugar Buttercream Frosting:
1 cup butter, softened
1 teaspoon vanilla
1/3 cup dark brown sugar
1 (16 oz.) package powdered sugar
3 to 4 tablespoons milk
Garnish: Mini Chocolate Chips and Pecan Pieces
Cream together butter and vanilla. Beat in brown sugar. Gradually add 1 1/2 cups powdered sugar alternately with 1 tablespoon milk, beating on low speed until blended and smooth after each addition. Top with mini chocolate chips and pecan pieces.
