Ok, so I’m really not much of a salad person. Actually, I really like salads with pasta or fried chicken, or even salads with bacon or cheese, but eating those types of salads kind of defeats the purpose, huh? Many times I’ve tried to eat more greens by eating a salad for lunch each day, but it’s never really stuck because I just don’t love the taste of lettuce and other greens. When I tried this salad, I was amazed at how delicious it was. It’s definitely a great lunch salad for those days you need to get in some greens!
The secret to this yummy salad is really in the delicious dressing. I could just drink this dressing; it’s that good! The rich peanut based dressing turns an ordinary salad into something special. The salad includes chickpeas, kale and red cabbage. I really don’t care for any of those ingredients separately, but mixed together with this amazing dressing, I can really enjoy them! Plus, this yummy salad is full of vitamins, protein and fiber, as well as being vegan!
Thai Kale Salad (adapted from Self Magazine)
3 Tablespoons peanut butter
2 Tablespoons rice wine vinegar
Juice of one lime
4 teaspoons toasted sesame oil
2 teaspoons soy sauce
1/2 teaspoon Sriracha sauce
1/2 teaspoon grated ginger
1 cup chopped red cabbage
1/2 cup shredded carrot
2 cups finely chopped baby kale
1 cup chopped red pepper
1 1/3 cup rinsed and drained chickpeas
In a small bowl, whisk together peanut butter, vinegar, lime juice, sesame oil, soy sauce, Sriracha, and ginger. If you prefer a little thinner dressing, add 1-2 tablespoons water to dressing.
Toss cabbage, carrot, kale, red pepper, and chickpeas with dressing. Makes 2 lunch sized portion or 4 side salad portions. Enjoy!
