After dinner on Sunday night, we were all craving a little something sweet. We had two pounds of strawberries in the refrigerator that needed to be used, so Strawberry Shortcakes were the perfect choice. My family loved these little shortcakes. And, I loved them because they were not only delicious, but also super quick and easy.
The base of these shortcakes is pancake mix. Any pancake mix would work, but I definitely have my favorite pancake mix – Publix Pancake and Waffle Mix. We don’t have a Publix nearby, so when we go to Florida to vacation, I pick up several boxes. The Publix Pancake and Waffle Mix makes the fluffiest pancakes of any of the mixes I’ve tried!
Classic Strawberry Shortcake
1 pound of strawberries, hulled and sliced
5 tablespoons sugar, divided
2 1/3 cups pancake mix
2/3 cups skim milk
1 teaspoon vanilla extract
3 tablespoons melted butter
whipped cream or whipped topping
Preheat oven to 425 degrees. Mix together strawberries and 1 tablespoon sugar.
In a large bowl, stir together, 3 tablespoons sugar, pancake mix, milk, vanilla and melted butter until it all comes together into a dough ball. Divide dough into 6 equal portions, placing on an ungreased cookie sheet. Sprinkle tops with remaining 1 tablespoon sugar.
Bake for approximately 12-14. Split the shortcake in half and top with strawberries and whipped cream. Enjoy!
