Some of my favorite desserts are the classics: chocolate chip cookies, brownies, chocolate cake. Dessert trends and specialty flavors may come and go, but there is just something about the simple, traditional flavors. This chocolate chip bundt cake embodies those pure, classic flavors. If you’re looking for a quick cake to make, bundt cakes are perfect because you don’t have to wait to frost them. Plus, they come straight out of the pan looking beautiful.
This version is covered with a delicious chocolate glaze. The glaze adds another sweet dimension to the cake. If you make the cake, don’t skip the two tablespoons of vanilla added to the cake! The extra flavor it adds is worth it!
Chocolate Chip Bundt Cake (adapted from Duncan Hines)
For the cake:
1 cup of mini semi sweet chocolate chips
1 Box Yellow Cake Mix
1 (3.4 ounce) package instant pudding mix
4 large eggs
1 cup milk (I used skim)
1/3 cup vegetable oil
2 tablespoons good quality vanilla extract
For the chocolate glaze:
3/4 cup semisweet chocolate chips
3 tablespoons butter
1 tablespoon light corn syrup
1/2 teaspoon vanilla extract
To prepare the cake: Preheat oven to 350 degrees. Spray bundt pan with cooking spray (I love Pam Baking Spray). Stir 1 tablespoon of cake mix with mini chocolate chips. Set aside (Adding a little cake mix to the chocolate chips with help them to not sink to the bottom of the pan while baking). Add remaining cake mix, pudding mix, eggs, milk, oil, and vanilla extract to large mixing bowl. Beat on low for 30 seconds. Increase speed and beat on medium for 2 minutes. Fold chocolate chips into batter. Pour batter into bundt pan. Tap pan on counter to remove any air bubbles. Bake 4o minutes or until a wooden toothpick inserted in the center comes out clean. Cool in pan for 25 minutes in pan on wire rack. Remove from pan and cool on rack.
To prepare the glaze: Add chocolate chips, butter and corn syrup into a microwave safe bowl. Microwave in 30 second increments, stirring after each increment, until chocolate is fully melted. Add vanilla extract. Drizzle glaze over cooled cake.
