With the holiday break in full swing, my Sam has been baking us a few things for breakfast. He wakes up fully rested and ready to go in the mornings. He’s really the only one in our house that wakes up that way! The rest of us night owls are all too hapy to sample his breakfast treats and clean up his mess.
One treat Sam made for us recently were some Mini Baked Vanilla Donuts. The recipe he used makes about 5 dozen mini donuts, which seems like a lot of donuts. But, these mini treats disappeared pretty quickly!
Adding a few sparkly sprinkles to the tops of these goodies instantly makes them a great breakfast or party treat for New Year’s Eve or New Year’s Day. Gold or silver sprinkles, non-pariels, or sanding sugar would work perfectly for a New Year’s treat.
Mini Baked Vanilla Donuts (adapted from Food Network)
2 cups all purpose flour
1 1/2 cups granulated sugar
2 teaspoons baking powder
1/2 teaspoon kosher salt
1 large egg, slightly beaten
1 1/4 cups milk
2 tablespoons butter, melted
2 teaspoons vanilla extract
1 cup powdered sugar
1/2 teaspoon vanilla extract
2-3 tablepoons milk
Preheat oven to 375 degrees. Whisk together flour, sugar, baking powder, and salt. Add egg, milk, butter, and vanilla extract to dry ingredients. Stir until fully combined.
Spray mini donut pan with cooking spray. Fill donut cavities 1/2 full. (I’ve found it’s easiest to put the batter into a piping bag and pipe it into the cavities.) Bake donuts for about 7-8 minutes, or until golden brown. Remove from oven and let cool.
For the Glaze: Stir together powdered sugar, vanilla extract, and 1 tablepoon of milk. Add another tablespoon of milk and stir until you receive the desired consistency for glaze.
Makes about 5 dozen mini donuts.
