Korean Barbecue Beef
We loved the flavor of this meat. We don’t have a grill at our apartment right now, so I ended up searing the meat over high heat, then throwing it into the oven until it was cooked to medium. I also used a flat iron steak, because it just happened to be on sale at the grocery store. We served it with rice and steamed broccoli. I set aside a little of the marinade before pouring it on the meat. We poured a little of that sauce over the meat and broccoli for serving.
Mini Ham and Cheese Quinoa Cups
These little cups are like little heavenly bites! They were great for dinner, served with a salad. They would also work well for breakfast or lunch. They remind me of other egg casseroles, but I loved the including quinoa in the place of bread. They seemed much healthier than the egg casseroles I typically make.
Thai Chicken Tacos
This was a quick, easy dinner that we all enjoyed. I served it with sugar snap peas and a broccoli slaw salad. I purchased a jarred peanut sauce, but next time I am going to the try the homemade sauce recipe that is provided. It sounds delicious!
Braided Pizza Loaf
This is a fun way to make basically a large calzone. My daughter was especially impressed with the braided look. It was eaten so quickly, I might have to make two of them next time.
I’ll be taking a break from Menu Monday next week since we are on Spring Break this week. But, it will return the following week.
