I must confess that I am tired of all the winter weather we’re having. I’m ready to move on to salads, spring pasta, and other lighter spring dishes. But the weather just isn’t there, yet. This past week, I did break out my favorite Tabbouleh recipe. Hopefully, more spring dishes will start showing up in our menu!
Jamaican Jerk Pulled Pork Tostadas
My kids loves these little yummy tostadas. They called them Mexican pizzas. They topped the cooked tortillas with salsa, pork, and melted cheese. I loved putting the pork in the crock pot and letting it sit all day. It made dinner prep very easy.
BBQ Chicken Pizza
I’ve made barbecue chicken pizza many times. I’ve never put pickled jalapenos on it. We loved the addition of the spicy peppers with the sweet BBQ sauce.
Greek Chicken and Tabbouleh
I always make a big batch of Tabbouleh so we have leftovers for lunch the next day. The flavors meld together even better after hanging out together for several hours. This chicken recipe called for grilling the chicken. Since we are not really to grilling weather, yet, I simply baked chicken breasts. The chicken paired perfectly with the Tabboleh.
Spaghetti with Turkey Meatballs
We always have a bag of Trader Joe’s Turkey Meatballs in our freezer for those busy nights where cooking a big meal just isn’t an option. They are by far our favorite freezer meatballs.
