Even though March has arrived, winter weather has been hanging around over the last couple of weeks. We even had a snow day mid-week last week. The cooler weather has certainly affected my dinner choices. Does the weather affect your dinner choices? What are your favorite Spring recipes?
Thai Fried Quinoa
Although we make fried rice often, I’ve never thought of making it with quinoa. Since quinoa is packed with much more protein than rice, I was curious to see how the swap would taste. I’m not sure that my kids even noticed that I used quinoa instead of rice. Since this went over so well, I think I’m going to try swapping out quinoa for rice in all the fried rice dishes we eat.
Chili Lime Turkey Burgers
Turkey burgers topped with salsa and guacamole are a yummy switch to the traditional mustard and ketchup topped burgers. We enjoyed sweet potato fries and corn with this dish. If you want a quicker burger without sacrificing flavor, Trader Joe’s also makes a fantastic Chile Lime Turkey Burger.
Roasted Sausages and Grapes
If I saw this recipe listed online or in a magazine, I would never try it. Sausage and grapes roasted together just doesn’t sound that appetizing to me. However, I was at a charity dinner a few weekends ago and heard a couple of people talking about this dish by Ina Garten. They were raving about how delicious it was, so I decided to give it a try. I used Aidells Italian Sausage, so I skipped the first parboiling step. I’m thrilled we decided to give this a try — it was simple and delicious. We served it with cheese grits and broccoli.
BBQ Turkey Meatloaf
Every winter I make meatloaf a couple of times. Typically, I make the Flying Biscuit Restaurant’s Turkey Meatloaf. When I saw this recipe for a BBQ topped meatloaf, I knew I wanted to try it. The recipe calls for homemade BBQ sauce, which I did not do. Instead, I used Sweet Baby Ray’s Hickory and Brown Sugar sauce. Also, I halved the recipe and cooked it about 10-15 minutes longer than the recipe called for. We served it with mashed potatoes and green beans. This meatloaf was quickly devoured!
