I’m barely making this one in still on Monday! Shew! But, I’m sneaking it in before the end of my Monday, at least. I spent the majority of my day painting a playroom, so posting had to wait until after the kiddos went to bed. How did you spend your Monday?
Tex Mex Lasagna
We make this frequently in our house with one slight change. Instead of noodles, I used corn tortillas. Since I almost always have these ingredients on hand, it’s a great last minute dish.
Fig Prosciutto Pizza with Arugula
Over spring break, my friend Andrea (you can see how talented she is at party planning here and here), suggested a great little pizza restaurant, A Tavola She also suggested we try the Fig Prosciutto Pizza with Arugula. It was absolutely to die for and I’ve been thinking about it ever since. I found this recipe from the The Pioneer Woman. Although she makes home made crust, I just used Trader Joe’s pizza dough. Although I didn’t have the huge pizza oven, like the restaurant, it definitely satisfied my craving!
Lime Chicken and Black Bean Burritos
This recipe calls for tequila in the marinade, but we actually didn’t have any. So, I just substituted a little water in the marinade. They may have been missing something without the tequila, but they sure didn’t taste like it!
Thai Chicken Lettuce Wraps
These little wraps reminded me of PF Changs’ lettuce wraps. The addition of the mango salsa was a nice complement to the wraps. I served these with some steamed rice.
My mouth is watering! I’ve read about that pizza place in Cincy but never heard a firsthand review. We’ll have to give it a try sometime. I’m loving the sound of that pizza!
