The end of April means one thing here in Kentucky — it’s almost Derby Day!! Derby week is one of my favorite weeks of the year. And, one of my favorite desserts is a delicious pie that is made especially for Derby with gooey chocolate, pecans, and bourbon. The exact recipe of the real Derby Pie is a closely guarded secret, held by a Kentucky restaurant that also holds a trademark on the pie.
These little donuts pay homage to that yummy pie in a small, bite size way. There’s no need for a fork and plate with these little guys. They are perfect for your Derby party or even just a decadent Derby Day breakfast. My secret tip to make these extra yummy — use your very best bourbon!
Chocolate Bourbon Pecan Donuts (adapted from My San Francisco Kitchen)
Donut Batter:
3/4 cups all-purpose flour
1/3 cup brown sugar, firmly packed
1 tsp baking powder
1/4 tsp salt
1/4 cup + 2 tbsp milk
1 egg, beaten
1/2 tsp vanilla extract
1/2 cup mini chocolate chips
Preheat oven to 375 degrees. Whisk together flour, brown sugar, baking powder, and salt. Add milk, egg, vanilla extract to dry ingredients. Stir until fully combined. Stir in chocolate chips.
Spray mini donut pan with cooking spray. Fill donut cavities 1/2 full. (I’ve found it’s easiest to put the batter into a piping bag and pipe it into the cavities.) Bake donuts for 7 minutes. Remove from oven and let cool.
Chocolate Glaze:
2 tbsp butter
1 tsp light corn syrup
1 tbsp milk
1/2 tsp vanilla extract
1-2 tsp bourbon (adjust for strength of desired bourbon flavor)
2 tbsp mini chocolate chips
1/2 cup confectioners sugar (plus extra)
Chopped pecans
Melt butter in a small saucepan, over medium heat. Add corn syrup, milk, vanilla extract, 1 teaspoon bourbon, and chocolate chips. Whisk together over medium heat until the chocolate is melted. Whisk in confectioners sugar. (If desired, add additional bourbon and 2 extra tablespoons of sugar to thicken.) Keep chocolate glaze on low heat. Dip donuts in chocolate, sprinkle pecans on top. Makes approximately 30 donuts.
I could eat a whole plate of these! Good choice of bourbon, or so my husband would say 🙂
