Do you love baking? I love to bake sweet treats, I really do. But, sometimes it’s impossible to find the time. You know, like all families, we’ve got lots of other stuff – basketball practice, swim team carpool, homework, school meetings, tennis lessons. There are just weeks where our schedule is so packed that the oven barely gets turned on, even for making dinner. Those seem to be the very weeks that I’ve volunteered to bring a sweet treat to school for a class party or for some other event.
If you have those weeks, too, then you’re going to like this Valentines cupcake idea. To make an ordinary store bought cupcake into a fresh, fruity Valentines cupcake, all you need is a mini heart cookie cutter (or knife) and some strawberries. These are truly the easiest Valentines cupcakes ever!
I purchased these gluten free chocolate cupcakes from Trader Joe’s. When I got them, they were just topped with vanilla buttercream. To turn them into the most adorable Valentines cupcake, I simply topped them with a mini strawberry heart. To make the heart, remove the top from a strawberry, then cut it down the middle, length-wise. Using a mini heart shaped cookie cutter, cut out a strawberry heart from each half. In other words, one strawberry will make two strawberry heart cupcake toppers.
If you don’t have a mini heart shaped cookie cutter on hand, no worries. You can simply cut the strawberries into hearts like these. The best part about these cupcakes is that the strawberry gives a little balance to the cupcake with its fresh, slightly citric taste. And, since you are topping the cupcakes with fresh fruit, you don’t have to worry about adding even more sugar to an already sweet treat!
