Bacon, Cheddar & Bacon Biscuits (adapted from A Beautiful Bite)
4 slices bacon, cooked and crumbled
2 cups flour
3 Tablespoons baking powder
1/2 teaspoon salt
4 tablespoons cold butter, cut into small pieces
8 ounces shredded cheddar cheese
1 cup beer
Preheat oven to 450 degrees.
Add flour, baking powder and salt to large bowl. Whisk together. Work butter into flour using a pastry cutter or two knives until the butter and flour resembles a course meal.
Add bacon, cheese and beer to flour mixture and stir until combined. Turn dough out onto floured surface. Knead a few times, then roll out to 1 – 1 1/2″ thickness. Using a cookie cutter or the bottom of glass, cut dough into rounds. Place rounds onto a baking sheet.
Bake for 15-20 minutes or until golden brown.
