Happy July 4th, friends! Hope that your day is full of friends, family, cookouts, laughter, and fireworks! And, to all my Canadian friends, Happy 150th Birthday to your wonderful country! Hope that you had a big celebration this weekend!
We already began our July 4th celebration with a little family cookout last night. For dessert, I made this simple Patriotic Fruit Pizza.
Of course, the slightly OCD side of me had to count out exactly 50 blueberries to add to the flag. However, when it came to adding stripes, I ran out of room. So, instead of 13 stripes, I ended up with just 11. Oh well! It was just as tasty with 11 stripes! But, if you are completely OCD, you could try using raspberries instead of strawberries. Since they are slightly smaller, you could probably fit in all 13 stripes.
Patriotic Fruit Pizza
1 8oz package of cream cheese, room temperature
1/3 cup sugar
1 teaspoon vanilla extract
1 pint blueberries
1 pound of strawberries
Preheat oven to 350 degrees. Press cookie dough into a 11×15″ baking sheet until the entire baking sheet is covered. Bake about 15 minutes or until cookie dough gets a slightly golden color. Remove from oven and cool completely.
Beat together cream cheese, sugar and vanilla extract until fluffy. Slice strawberries into vertical slices.
To assemble, spread cream cheese mixture over cookie sheet. Use blueberries to make the stars portion of the flag. Place strawberries into stripes pattern. Refrigerate until ready to serve.
