This past week included both Mardi Gras and Valentine’s Day, so it was quite a holiday-filled week. For me, holidays usually mean baking, which I certainly did more of than normal this past week. But, we also had several yummy dinners from recipes I found around the web. Here is the menu:
Sunday: Buffalo Chicken French Bread, Crudites
If you love buffalo wings and pizza, this is a great combination of the two. My kids found the buffalo sauce to be a little too spicy and overpowering. For them, next time, I’ll add a little more chicken and less sauce, more like a sandwich than a pizza.
Monday: Chicken Cordon Bleu, Baked Potatoes, Roasted Baby Broccoli
My daughter declared she wanted this to be her birthday meal next year because it is her new favorite dish. It was much easier than traditional Chicken Cordon Bleu and just as tasty.
Tuesday: Jambalaya, Garlic Bread, Crudites, and Praline King Cake Cupcakes
Since Tuesday was Mardi Gras, we has easy Jambalya. I also made Praline King Cake Cupcakes. They were fun, easy ways to celebrate Mardi Gras.
Wednesday: Honey Lime Chicken Enchiladas, Rice & Corn
Chicken Enchiladas Suiza are a regular menu item at our house. But, when I saw this recipe that included honey lime chicken, I knew I had to to try it. And, I’m sure glad it did. This is definitely my new favorite Chicken Enchilada recipe. Something simple like marinating the chicken in honey and lime added an insane amount of new flavor!
